Bacon, Egg, & Cheese Sandwich for a Crowd Recipe
Summertime means guests and visitors, as well as extra family members home. Sometimes it’s a challenge to feed them all. Anyone who loves bacon, egg, and cheese sandwiches from fast food places (ok, does anybody really like them?) will love the fact that they can make “sandwich” squares at home quickly, and everybody will love them. Of course you can substitute ham or cooked sausage for the bacon, if you like, and the fact that you don’t have to let the frozen dinner roll dough rise (the English muffins at fast food places are fairly heavy), means that breakfast takes very little hands-on time. Most brunch bakes are knife and fork affairs, but this one is sturdy enough to just be picked up and eaten. A bonus if you’re going out the door, or if you don’t want a bunch of dishes to do. One of the best aspects of this bake is that there are no soggy bread parts- everything is baked through (a plus for those who have a texture problem with sogginess).

12 Servings

10 frozen thaw, rise, & bake yeast dinner rolls, cut into quarters
10 eggs
1/3 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

12 ounces thick sliced bacon, cut into pieces

3 cups grated cheddar cheese, divided

  1. Place the dinner roll dough pieces in a large bowl.
  2. Crack the eggs into a blender container; add the milk, salt, and pepper; blend until smooth on low speed (to avoid as many bubbles as possible).
  3. Pour the mixture over the dinner roll dough pieces and stir so they are completely coated. Set aside.
  4. Place the bacon in a large skillet and fry over medium heat, stirring occasionally, until crisp and brown.
  5. Remove from the skillet and drain. Alternately, place the pieces in the air fryer and air fry 7-11 minutes, stirring once, until crisp.
  6. Preheat oven to 350º.
  7. Spray a 9" x 13" baking dish with non-stick spray.
  8. Pour the dinner roll mixture into the prepared pan; sprinkle evenly with 2 cups of the cheese and the bacon.
  9. Bake 20 minutes; remove from the oven, sprinkle with the remaining cup of cheese, and return to the oven for 20 minutes or until bubbly on top and the rolls are cooked through. Let sit 5 minutes before cutting into squares.
